recipe: weeknight london broil and oven-roasted old bay potatoes

I have a busy work schedule. I know that it’s not as bad as some, but on nights when I go to the gym after work I don’t get home until 8:30. And the last thing I want to do on those nights is start cooking an elaborate dinner. That’s why I love this easy recipe for London Broil and who doesn’t love some Old Bay?

Easy Weeknight London Broil and Oven Roasted Old Bay Potatoes (potatoes inspired by Martha Stewart)

Ingredients

  • 2 lbs of London Broil or similar cut
  • 2 Tbsp of steak sauce (I highly recommend Peter Luger or another higher quality sauce)
  • 2 large or 3 small sweet potatoes cut into 1″ pieces
  • 1 1/2 tsp Old Bay
  • Olive oil
  • Salt
  • Pepper

Heat oven to 450 degrees. Spread potatoes on a cookie sheet and drizzle with olive oil. Sprinkle the potatoes with Old Bay and toss to coat evenly. Place in the oven and cook for 30-35 minutes, stirring once or twice while cooking.

In the meantime, use a fork to poke some holes in your London Broil. Coat with steak sauce as a marinade and sprinkle with salt & pepper. Let it sit and soak in the flavor of the steak sauce.

Once the potatoes are done, take them out of the oven and turn the oven to broil. Cook the London Broil until done, approximately 5 minutes per side. Let sit for a few minutes and then cut into thin slices and serve.
