recipe: oven “fried” chicken

I love fried chicken. But we all know that it isn’t even close to good for you. So I decided to make my own oven “fried” chicken. What really makes this recipe different is the texture from using different types of bread crumbs.

This recipe got rave reviews even from the pickiest kids I know (and that’s saying something).

Oven “Fried” Chicken

Serves 4-6 depending on appetites

Ingredients

  • 8 bone-in chicken thighs (can be skinless or not)
  • 1 cup whole-wheat bread crumbs
  • 1/2 cup panko crumbs
  • 8 whole-wheat crackers, crushed or 1 cup cornflakes, crushed

Preheat the oven to 400°F. Prepare a cookie sheet by lining with aluminum foil. If you have a cooling rack that fits into the cookie sheet, put on top of the cookie sheet to get the chicken crisp on all sides.

Mix together the whole-wheat bread crumbs, panko, and cereal/crackers.

Rinse the chicken thoroughly but do not pat dry. Coat each piece of chicken in bread crumbs and place on the prepared rack/cookie sheet. Bake for 40 minutes or until cooked through. Remove from the oven and let sit for 5 minutes before serving.
