This recipe is inspired from the restaurant Westville in NYC (If you’re ever in the city, I highly recommend checking it out– the food is delicious and healthy).
Quinoa with Mango and Mint
- 1 cup quinoa, uncooked
- 1 cup mango, diced
- 1 bunch mint leaves, finely chopped
Cook the quinoa according to package directions. While the quinoa is cooking, dice the mango and remove the mint leaves from their stems and finely chop.
Once the quinoa is done cooking, combine all ingredients in a bowl and mix well. Serve and enjoy!
