recipe: bacon and mozzarella frittata

As part of this weekend’s spring cleaning, I decided to work on using up some leftover ingredients that I had sitting around in the fridge.

Bacon and Mozzarella Frittata

Serves 2-3

9 WW PP+ for ½ of the Frittata

Ingredients

  • 5 slices bacon, chopped into ¼” pieces
  • 5 eggs, lightly beaten
  • ½ cup shredded mozzarella cheese

Heat a medium oven-safe non-stick skillet over medium heat. Add in bacon and cook until it starts to crisp (depending on individual preference).

Mix the cheese and egg together and pour over the bacon. Stir with a spatula to combine fully. Increase heat to medium-high and cook for 3-4 minutes until egg begins to set.

Move pan to broiler and broil for 4-5 minutes until egg is fluffy and starting to brown on the top.
