recipe: grilled chicken, three ways

As part of my push to get healthier, I have tried to do more healthy meal prep. I found boneless skinless chicken breast on sale at the market and decided to grill up a bunch of chicken. Not wanting to have plain chicken for every meal, I decided to make three different marinades: balsamic mustard, garlic cajun, and spicy chipotle honey chicken.

Note: Recently I went to meet my mom and sister in New Hope, PA. While I was there, we stopped an at a store called Olive-n-Grape which sells tons of infused vinegars and oils. The recipes below use those oils which can be ordered here. Alternatively, you can just use regular non-flavored ingredients as a substitution.

Balsamic Mustard Grilled Chicken

Mix together ingredients in a baking dish. Add in chicken and turn to coat. Grill/cook until done. [It was 4½ minutes for me on my Foreman grill]

Garlic Cajun Chicken

  • 1 Tbsp Cajun seasoning
  • ½ tsp garlic salt
  • 1 lb boneless skinless chicken breast cut into strips

Mix together Cajun seasoning and garlic salt. Lay out chicken breast strips and coat with seasoning. Turn and coat the other side. Grill/cook until done.

Spicy Chipotle Honey Chicken

  • 1 Tbsp chili powder
  • 1 tsp garlic salt
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper
  • sprinkle crushed red pepper (optional, to taste)
  • 1 Tbsp Chipotle olive oil from Olive-n-Grape
  • 1 Tbsp unflavored olive oil
  • 1 tsp honey
  • 1 lb boneless skinless chicken breast cut into strips

Mix together chili powder, garlic salt, paprika, cayenne pepper, and crushed red pepper in a small bowl. In a larger bowl, mix together Chipotle olive oil, unflavored olive oil, and honey. Add in chicken and turn to coat. Sprinkle with seasoning, Turn and sprinkle the other side with seasoning. Grill/cook until done.
