pintested, meredith approved: baked stuffed chicken

This is a recipe that has been floating around Pinterest for a while now. Here is the original pin with the original recipe from Pinch of Yum


This recipe turned out really great. I served it with a side salad and it was filling without being super heavy. It’s also very light, clocking in under 300 calories per serving

Baked Stuffed Chicken (adapted from Pinch of Yum)

Serves 8


  • 2 lbs boneless skinless chicken breasts
  • 2 eggs
  • 1 cup bread crumbs (I used Panko but feel free to use whatever you have on-hand)
  • 6 oz baby spinach
  • 1 cup part-skim ricotta cheese
  • 6 Tbsp grated Parmesan cheese
  • 1 Tbsp olive oil
  • 1 clove minced garlic
  • 1 cup marinara sauce
  • Mozzarella cheese (I used shredded since it’s what I had, but I would recommend high-quality whole mozzarella)


Prepare the chicken by cutting into thin long pieces. You may need to pound them as well (great to get out your frustration!)
Heat up the olive oil in a pan and add the garlic. Cook spinach until soft and reduced down (about 5 minutes)

Combine the spinach with the ricotta cheese and half of the Parmesan cheese. This will be the filling for your chicken.

Take each piece of chicken and place it in the chicken. Roll the chicken up and dip each piece in the egg. Cover with bread crumbs and place in a baking dish with the lose end facing down.

Bake at 450 degrees for 25-30 minutes until the chicken is browned


Top with marinara sauce and mozzarella. Bake for 3-5 minutes more until mozzarella starts to melt. Serve and enjoy.
