recipe: pumpkin oatmeal chocolate chip cookies

I LOVE Fall. It’s a wonderful season where everything is beautiful outside and yet I don’t get eaten alive by the bugs. Amazing. So I really wanted to get into the spirit of things and make some fall-themed snacks. Unfortunately, most of the recipes I found for Pumpkin Chocolate Chip cookies have enough butter to make Paula Deen blush. So I decided to get a little creative and make a healthier version.


Pumpkin Oatmeal Chocolate Chip Cookies (adapted from The Wife of a Dairyman)


  • 1 cup flour
  • 2/3 cup brown sugar (packed)
  • 1 egg
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup chocolate chips
  • 3/4 cup pumpkin puree
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 3/4 cup old-fashioned oats

Combine flour, baking powder, baking soda, salt, and pumpkin pie spice in a bowl. Set aside. Whisk eggs, brown sugar, oil, and vanilla in a separate bowl. Add the pumpkin and blend. Add the flour mixture and blend. Fold in oatmeal and chocolate chips. Drop rounded spoonfuls on an ungreased cookie sheet (I used my Silpat). Bake at 350 degrees for 15 minutes.
