I’m still struggling to find a sustainable lifestyle for myself that balances social occasions (aka alcohol) and my new healthy lifestyle (and desire to wear skinny jeans). I recently read a really great book Foodist that emphasizes local, fresh produce and living a balanced life focused on overall wellness and the positives of eating healthfully instead of focusing on a list of foods that are not allowed.
Inspired by this book and the time-vacuum that is Pinterest, I decided to make my own granola that is extremely low in sugar. Please see the recipe below:
- 2 1/2 cups dry ingredients (I used old-fashioned oats, quinoa, peptias (pumpkin seeds), and almond slivers)
- 1 Tbsp coconut oil (melted)
- 1 Tbsp honey
- 1/2 Tbsp agave nectar
Combine the coconut oil, honey, and agave nectar in a small dish. Mix with the dry ingredients to coat well and spread out on a cookie sheet covered in parchment paper so that it is a single layer. Bake at 325° for 15-20 minutes stirring once until crunchy. Store in an airtight container once cool.
